He's back........5
The King of the Q, Teddy Reader, is back with a whole book dedicated to his signature grilling method.....The Plank!
The beginning of the book explains types of woods you can use, prepin' the plank and where to buy planks.
The recipes are for the most part simple to follow with some maybe taking more time and effort....but what could be more fun then messin' around in your backyard on the weekend building a cedar plank roasting pan out of cedar shims and planks..... Yep, a cedar plank roasting pan to create such wild recipes as a Planked Breakfast Strata, "Plankzagna", or even get this........a Planked Apple Cake for dessert!
Want to "Wow!" your friends? Create a meal from appetizer to dessert on the plank. Though all these recipes are absolutely delicious here are a few of my favourites that I have tried and that turned out extremely well.....
Red Wine Soaked Oak Planked Cambazola with Raspberries, Almonds and Smoky Bacon....serve with smoke grilled pitas, breads or crackers...its out of this world!
Planked Peppercorn New York Strip Steaks with a side of "Armageddon Crater Mashed Potatoes"...yes those are also planked, my guests went crazy for them!
Fixin' a little tailgate meal before the "big game", how about some Steak House Nachos and Planked Buffalo Chicken Thighs
Planked White Chocolate Pecan Butterscotch Brownies.
I've been watching and recreating The King's recipes since catching an episode of Cottage Country back in the early 90's. His recipes never let me down.
They never cease to amaze me and my guests that I cook for.
Ted Reader truly is The King of the Q

The Art of Plank Grilling - Licked by Fire, Kissed by Smoke5
I have cedar planked salmon several times and truly believed it was the only way to do a salmon, until I tried my 1st recipe out of Ted's new book - Peanut Butter & Jelly Fish (Salmon). It was still cedar planking salmon but with a twist.

We had company from Grenada and they were all for trying something a little different. I used Ted's Planking Spice recipe also found in the book - brown sugar, lemon pepper, sea salt, pepper, garlic, onion and more that you rub into the flesh of the salmon, then top that with a thin layer of peanut butter covering as much of the salmon as you can (its tricky but you can do it if you work slowly) and then top that with a thin layer of his Pineapple Rum Sauce (available at fine specialty food stores or many BBQ stores). With the skin side down, smoking for about 18 minutes on a cedar plank, this dish was to die for.

Our company was duly impressed and took a copy of the recipe back to Grenada with them.
