But vegan readers are in for a treat, because Burton (The Everyday Vegan) has compiled a trove of (mostly) fast and easy recipes for dishes that promise to deliver flavor and texture, and use fresh produce as well as whole grains (like kamut, brown rice, quinoa and millet), beans (including adzuki, kidney, navy and chickpeas) and flours (such as spelt, barley and oat).
