Hot Chick’n Salad
 
This scoopable chicken salad was inspired by classic Buffalo wings. Its got the heat, the ranch, and even the celery and carrots. What it doesn’t have is all the fat and calories. Yay!
 
PER SERVING (half of recipe, 3/4 cup):
142 calories, 2.25g fat, 600mg sodium,
6g carbs, 0.5g fiber, 2g sugars, 25g protein
 
Ingredients:
 -6 ounces cooked lean skinless boneless chicken breast, cubed
 -3 tablespoons fat-fee mayonnaise
 -3 tablespoons chopped celery
 -3 tablespoons chopped carrots
 -2 teaspoons reduced-fat parmesan-style grated topping
 -11/2 teaspoons Frank’s RedHot Original Cayenne Pepper Sauce
 -1/2 teaspoon dry ranch dip/dressing seasoning mix
 
Directions:
 -In a small bowl, combine the mayo, Frank’s, and ranch mix. Stir well, and set aside.
 -In a medium bowl, mix chicken, celery, and carrots. Add the saucy mayo, and stir. Sprinkle with parm topping, and stir again.

This is a seriously good little cookbook for those of us who want to eat well without eating loads of unnecessary calories. I thought the recipes were easy to follow and the food tasted really good. (Normally, dieting cookbooks don't offer less calories AND good taste.) So, if you are looking for a quick and easy fix to watch those calories, you may have just found it with this one. The recipes in this book are easy, delicious and could change the way you live the rest of your life. There are so many tips and suggestions on how to cut down on calories and fat in the foods that you eat. It's opened my eyes to my past food selections so now I will make the right choices when planning my daily intake of calories. Even if I don't follow the recipes exactly, I'm still confident that I can select healthy alternatives.
